Pepperoni and Cheese Pizzadillas

What are your plans for Superbowl Sunday this year?  Whether you are hosting a big bash, attending one, or having a quieter game day at home with the family, you will need some tasty dishes for nourishment!  We have found some great appetizers for you to serve.  Enjoy!

Pepperoni and Cheese Pizzadillas

Prep time:  15 mins
Cook time:  20 mins
Total time:  35 mins
Serves: Serves 6 to 8

Ingredients:
butter for pan
8 (6-inch) flour tortillas (you can also use whole wheat tortillas)
2 cups pizza sauce, divided
2 cups fancy-shredded part skim mozzarella cheese, divided
2 teaspoons dried oregano, divided
1/2 cup pepperoni minis, divided

Instructions:
Set an iron skillet or a frying pan over medium heat. (Iron skillet preferred)
Drop a tablespoon of butter to melt.
Assemble the tortillas.
Spread 1/8 of pizza sauce over each tortilla.
Divide up the toppings evenly over each flour tortilla; add cheese, sprinkle with oregano and top with pepperoni.
Transfer one tortilla to skillet, toppings-side-up.
Cook for 30 seconds, or until cheese begins to melt.
Using a spatula, fold one side of the tortilla over the other.
Cook for a few more seconds; flip it over and continue to cook just until lightly browned.
Remove from skillet and transfer to a paper towel-lined plate.
Continue to cook the rest, adding more butter as needed.
Serve immediately.

Notes
Served as an appetizer, this makes 16 wedges of Pizzadillas, and should be served with a side of Marinara Sauce.



Buffalo Chicken Dip

Buffalo Chicken Dip

Ingredients:
2 large cans chicken (or the equivalent of fresh shredded chicken)
2 cups shredded cheddar cheese (Reserve some for the top.)
1/2 cup - 1 cup Frank's Buffalo Hot Sauce (I use 1/2 cup because I'm a wimp.)
1 cup sour cream
1 cup cream cheese, softened

Instructions:
Set aside some of the cheddar cheese for the top.
Mix all other ingredients in a bowl thoroughly.
Bake at 350 degrees for 20-30 minutes until the cheese is melted and the mixture is beginning to bubble.
Serve with crackers or chips. Best served warm.



Meatball Sub Cupcakes

Meatball Sub Cupcakes
Yield: 12 cupcakes

Ingredients:  
1 can refrigerated crescent dinner rolls
4 oz cream cheese, softened
3/4 tsp Italian seasoning
1 cup shredded mozzarella
12 (1oz) frozen meatballs
1 1/4 cup spaghetti sauce

Instructions:
Preheat oven to 375. Spray 12 regular size muffin cups with cooking spray. Set aside.

Remove dough from can; press seams to seal and press into an 8x18 inch rectangle. Cut dough into 12 squares. Press squares into muffin pan cups. 

Combine cream cheese, Italian seasoning and 1/2 cup mozzarella cheese.

Divide the cream cheese mixture in the bottom of each muffin cup. Place meatballs on top of cheese; top each meatball with 2 tablespoons spaghetti sauce. Sprinkle with remaining mozzarella cheese. 

Bake 15 to 18 minutes, or until golden brown.
