Turkey Corn Chowder

Hope you all had a wonderful Thanksgiving filled with friends, family and good food!  Now, what to do with all those delicious leftovers?!  We are here to help!  We've found some great recipes for your leftovers.  Enjoy!



Turkey Corn Chowder
Serves: 1-1/2 cups
Prep Time: 10 min
Cook Time: 20 min
Total Time: 30 min

Ingredients:
2 tablespoons butter
1/2 tablespoon olive oil
1 yellow onion, diced
1 large carrot, thinly sliced
pinch of salt
2 cups diced or shredded cooked turkey
3 russet potatoes, peeled and cut into 1-inch cubes
1 teaspoon dried thyme
1 teaspoon salt
1/4 teaspoon fresh ground pepper
1 can (14.75-ounces) cream style sweet corn
1 can (15.25-ounces) sweet corn, rinsed
2 cups low sodium chicken broth
3 cups 2% milk
chopped fresh parsley, for garnish

Instructions:
Heat butter and olive oil in a large soup pot over medium-high heat.
Add onions, sliced carrots, and pinch of salt; cook for 3 minutes, stirring occasionally.
Stir in the turkey and potatoes; season with thyme, salt and pepper.
Add cream style corn, sweet corn, chicken broth and milk; bring mixture to a boil over high heat.
Reduce heat to low and cover the pot; simmer for 20 minutes, stirring occasionally.
Remove from heat.
Let stand several minutes.
Give it a stir and taste for seasonings; adjust accordingly.
Garnish with chopped parsley.





Leftover Turkey Noodle Casserole

Leftover Turkey Noodle Casserole

Ingredients:
12 oz pkg Egg Noodles, extra wide
3 cups leftover turkey, diced or shredded
1 cup leftover carrots, diced
12 oz jar Turkey Gravy
1 T dried Thyme
1/2 t salt
1/2 t pepper

Instructions:
Preheat oven to 350 degrees. Spray 9x13 baking dish with non-stick cooking spray.
Prepare egg noodles according to package directions. Drain and place back into cooking pot.
Add into egg noodles: turkey, carrots, gravy and seasonings. Stir to combine.

Pour into prepared baking dish. Bake approximately 15 minutes until heated through.





Cranberry Pecan Turkey Salad

Cranberry Pecan Turkey Salad 
Prep time: 10 mins
Total time: 10 mins
Yield: Serves 6

Ingredients:
2 c. Cooked Turkey Breast, diced
1/4 c. Chopped Pecans
1/4 c. Chopped Celery
1/4 c. Dried Cranberries
1/2 c. Mayonnaise 
Salt and Pepper, to taste

Instructions:

Combine all ingredients in a bowl and mix well. Season with salt and pepper.
